Ok so my Tiramisu' recipe is slightly bastardised, but it tastes good and is simple to make!
The quantities are a bit random here as I normally do it to taste so make sure to taste each part as you go along!
Ingredients:
Sponge fingers
Tia Maria (about half a bottle)
Espresso coffee (3-5 shots)
a few tubs of Mascarpone
an egg
condensed milk
Icing sugar
1 vanilla pod
Cocoa
dark chocolate (for garnish)
mix the tia maria with the coffee and soak the sponge fingers in the mixture (it's best to do this one at a time) until they are nearly breaking up then lay them in the bottom of your dish until you have covered the whole thing.
Whip the white of the egg until stiff and then fold into the mascarpone along with some of the condensed milk and a little icing sugar (both of these to taste until it's sweet enough for you whilst still being stiff enough). Scrape the seeds out of the vanilla pod and add to the mixture.
Layer this on top of the soaked biscuits, then dust with the cocoa and some shavings of the dark chocolate. Pop it in the fridge to set a little bit and eat!
